Islay Single Malt – Scotch Whisky – Caol Ila
Islay Single Malt Scotch Whisky is a peated whisky, in the tradition of the Caol Ila distillery. Aged for 11 years in a cask that previously contained Oloroso sherry, where the smoke and iodized hints are enriched with fruity and spicy aromas.
Story
Located north of the Scottish island of Islay, the Caol Ila Distillery was founded in 1846. The distillery overlooks the strait that separates the island of Islay from that of Jura, one of the most evocative and spectacular places in western Scotland, called in English “Sound of Islay” and in Gaelic “Caol Ila”, from which the distillery takes its name.
The barley is locally malted in Port Ellen and then distilled in one of the six handcrafted copper stills, reconstructed maintaining the shape and characteristics of the original nineteenth-century ones. The water used to mix the distillate produced comes from a crystalline stream that flows from the limestone rocks of nearby Loch nam Ban, to flow into the sea at Caol Ila.
The light and elegant style of Caol Ila is due to the low filling level of the stills. Filling to approximately 33% capacity, allows for significant levels of backflow into the stills, where the vapor condenses and flows back into the bowl for further purification.
